Sparkling Rosé NV
BACK IN STOCK! Our non-vintage Sparkling Rosé is made from Pinot Noir grapes grown on the Saanich Peninsula. Following the traditional method, wild yeast was used for both fermentations to create this lively, yet layered wine—a bubbly built for everyday.
Winemaking notes: A combination of two vintages (2017 & 2018) and sourced from two of our older Saanich vineyards (Brambleside & Starling Lane), our non-vintage Sparkling Rosé was given 4-5 hrs skin contact before pressing to achieve it's lovely deep-pink hue. The base wine was fermented in neutral French oak barrels and aged on the lees for 6-8 months. Secondary bottle fermentation used a wild yeast culture kickstarted from lees that were saved from the primary fermentation. The bottled wine aged on its secondary lees for 18 months before being disgorged December 2020. Unfined, unfiltered. Zero dosage (aka Brut Nature.)
